What is Carvone?

Carvone is the rare terpene that smells like two completely different things depending on which hand it is. As a chiral molecule with formula C10H14O, carvone exists in two mirror-image forms that are otherwise chemically identical. The left-handed version, (S)-(โ€“)-carvone, is the signature molecule of spearmint. The right-handed version, (R)-(+)-carvone, smells like caraway or dill. Same atoms, same connectivity, opposite spatial arrangement at one carbon centre, and your nose can tell them apart because smell receptors are themselves chiral.

In cannabis, carvone is a trace-level terpene that occasionally registers on extended panels. When present, it can add a faint herbal-minty or caraway edge to cultivars that are already rich in other terpenes from the same biosynthetic family.

Did you know? Caraway-flavored rye bread and spearmint chewing gum both owe their characteristic scents to carvone, just to opposite-handed versions of the same molecule. If you could somehow swap the carvone in a caraway loaf for its mirror image, the bread would smell like spearmint gum instead.

On a cannabis COA, a lab reporting "carvone" without specifying the form is usually reporting both isomers as a single integrated peak, since they co-elute on standard GC columns.
